With all the maple-based foods in Vermont, we decided to have a maple themed dinner. I bought the Official Vermont Maple Cookbook and we picked out some recipes. We ended up making Maple and Orange Glazed Chicken, Maple Dumplings, Maple Glazed Sweet Potatoes, and Maple Mashed Potatoes. SO DELICIOUS! Although, I would not recommend making all the maple products together — it’s an extremely sweet dinner. But each one as a separate side is excellent. YUM
With Monday being President’s Day, we decided to have some adventures around Winooski. We were able to cross off one thing on the list - play on the rocks along the river. Not only did we play on the rocks, we had a goal to reach one particular rock (the one in the second picture.) Yes, it’s kinda in the middle of the river, and yes, we made it. We had to climb through a leeeeeetle hole underneath the overhang of the boardwalk, and walk through mud, rocks, and ice, but the view was gorgeous. Front row seats of the falls - mist in your face. It was super pretty.
